Ingredients:
- 4 lb. Extra Light DME
- 1 lb. Victory Malt
- 0.5 lb. 60L Crystal Malt
- 0.25 lb. Munich (Light)
- 0.25 lb. Carapils Malt
- 1 lb. Belgian Candy Sugar
Hops:
- 2 oz. Cascade (Bittering)
- 1.5 oz. Cascade (Bittering)
- 1.5 oz. Liberty (Finishing)
- 1 oz. Centennial Leaf (Dry Hopping) (Finishing)
Yeast:
- White Labs Pacific Ale (WLP041)
Method:
- Heat 3 gal. water to 170°F
- Steep grains for 30 minutes, maintaining temperature.
- Remove grain bag and add malt extract and sugar. Stir until dissolved.
- Add 2 ounces of Cascade Hops and bring mixture to a boil.
- After boiling for 30 minutes, add 1.5 ounces of Cascade hops.
- After boiling for 50 minutes, add 0.5 ounces of Liberty hops.
- Continue boiling for 10 more minutes.
- Cool the wort, and strain into fermenter.
- Top off with water to 5 gallons.
- Pitch yeast.
Allow up to 21 days for primary fermentation. After primary fermentation is complete, rack to secondary and add 1 ounce of Centennial leaf hops for dry hopping. Allow one month for secondary fermentation, and two additional weeks after bottling for conditioning.
